80W-140 specified for Daytona differential

In your Daytona owner's manual Ferrari specified Shell Spirax 1747A for the differential.
This product is 80W-140.
Yes, oil technology has changed since then, but why is everyone suggesting we use 75W-90 ???
(Specifically, Mobil 1 75W-90 with two bottles of GM limited slip additive.)
I can imagine the car will shift quicker with 75W, but one wonders why some people complain of clunks and chatter comming from the diff.
Has anyone tried putting the correct 80W-140 in the diff.?
